Fiesta Beef Skillet

INGREDIENTS:
1 lb. lean ground beef
1 tbsp. avocado oil
1 onion, diced
2 cloves garlic, minced
1 - 14.5 oz. can diced tomatoes with green chilis, drained
1 cup beef broth
2 cups chopped vegetables (bell peppers, zucchini, etc.)
1 cup of canned black beans, drained and rinsed
1 tbsp. chili powder
1 tsp. cumin
1 cup Minute Rice
Salt and pepper, to taste
INSTRUCTIONS:
In a large skillet, heat oil over medium heat. Add diced onion and minced garlic, sauté until fragrant.
Add lean ground beef to the skillet, breaking it up with a spatula, and cook until browned.
Stir in diced tomatoes, beef broth, chopped vegetables, beans, rice, chili powder, cumin, salt and pepper.
Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is cooked through. Stir occasionally to prevent burning.
NOTES:
Substitute regular diced tomatoes if you need less zing.
